Happy Monday Friends! Did you survive the time change? I’m dragging today… LOVE the later sunsets, but it sure does take a while to get used to it.
Today I’ve got a yummy spring cake. Not only is this cake oh-so-yummy, but it’s a little healthier too.
Have you seen on Pinterest where you can replace the oil and eggs with Greek yogurt? Well I thought I’d try it and add some carrots for good measure too… and the results were amazing!
This cake is so moist and flavorful!
I made mine with my favorite cream cheese frosting, but if you were wanting to keep the calories lower you could use a fat free whipped topping, etc.
Can I tell you how much I love this cute teal blue cake plate! Gotta love HomeGoods.
Carrot Spice Cake with Greek Yogurt
Ingredients
- 1 Box of Spice Cake Mix
- 1 container of Vanilla Greek Yogurt ((I used Oikos 5.3 oz size))
- 3/4 cups water
- 1 1/2 cup grated carrots
Directions
| Step 1 | |
| Mix together the water and greek yogurt. | |
| Step 2 | |
| Add water/yogurt to the spice cake mix and combine. | |
| Step 3 | |
| Add in the carrots and mix till evenly disbursed. | |
| Step 4 | |
| Pour mixture into two 9-inch greased cake pans. Bake at 350 for 20-23 minutes. | |
