Big Game Mexican Bacon Cheeseburger Dip

This weekend is my husband’s favorite weekend of football… the great 8 as he calls it.  This time of year is spent with a lot of games on our TV and lots of yummy football food.  As we prep for the Big Game and the gathering of family and friends there are a few things that make party hosting easier.  Of course everyone is looking for great food, but when you’re planning a party you know more is involved.

Here’s one of our family’s favorites… Mexican Bacon Cheeseburger Dip.

Mexican Bacon Cheeseburger Dip

Using great quality paper goods is essential for hosting a party.  After the game is over and everyone has gone home, I don’t want to spend my evening doing dishes.  To prep I took a trip to Smart and Final and picked up some of their Simply Value bowls, plates and napkins along with everything I needed to make this delicious dip.

This dip is hearty and warms you from the inside out.

Here’s the Mexican Bacon Cheeseburger Dip Recipe…

Mexican Bacon Cheeseburger Dip


  • 1lb ground beef
  • 5 slices of bacon
  • 2lb Velveeta cheese
  • 1 can Ro-tel
  • salt and pepper to taste


Step 1
Cook up your bacon strips as you desire. I like to cook mine at 400 degrees for about 20 minutes.
Step 2
Brown your ground beef on your stove top over medium heat until all the pink is gone. Drain the fat.
Step 3
Slice the Velveeta cheese into big chunks and add it to the browned ground beef over medium heat.
Step 4
While the cheese is melting slice your bacon into big chunks.
Step 5
Once the cheese is melted add the can of Ro-tel and your bacon and turn your heat to low. Let is simmer for a few minutes.
Step 6
Serve hot with chips or slices of french bread.

I love that this dip can be made in about 20 minutes.

Once it’s all prepped, I love putting in our mini crockpot to keep it warm throughout the game.

    I do a similar version of this dip but mine is with a can of Hormel chili instead of the bacon.

    I may try this one next time!

      Oh yum Stacy! The Hubster would love that. We do a dip with chili and cream cheese, but ground beef and chili is a meat lovers paradise.
