Favorite Family Dip

This seriously has to be one of the easiest & yummiest dips… just 2 ingredients people!

#1 ingredient… a can of chili ~ your choice… with beans, no beans, spicy, vegetarian… what ever you love.  We’re of the spicy bean variety here.

#2 ingredient… 4 ounces of cream cheese.

Put the chili and cream cheese in a pot and heat till the cream cheese has melted and it has heated through… taste testing is required for this! (SMILE)

Obviously this recipe can easily be double, tripled, etc.  I’d say the recipe above would serve 4-5 people depending on what other appetizers you have going on.

Oh… it’s creamy, yummy goodness!

For the Love of… Football Food

Hi Guys!   Sunday is feast day or as you might know it… Super Bowl Sunday.  I enjoy watching a great game, but I love watching the Super Bowl commercials and snacking on a lot of foods that I typically keep off my menu.  I put Super Bowl eating in the same category as birthdays, holidays, etc.… the calories don’t count… right??

Here’s some of the foods that I’m thinking about making and munching on with the family…

Christmas Goodies & Partylite Winner

Happy Monday!  I hope you had a wonderful weekend.

I’m done with my Christmas shopping with just a few more presents to wrap… so my brain is on baking and Christmas week festivities.

Here are some goodies I hope to make this week with the kiddos…

Christmas tree Peppermint bark

We always make peppermint bark, but these Christmas tree shaped ones are adorable… goodies for the neighbors.

Another peppermint goodie… these dipped pretzels will be super easy for the kiddos to make.

These Frosty the Smore-mans are A-Dora-Able!  I think all the neighbor kiddos would love one!

I want to have a hot cocoa bar on Christmas Eve!

We’re bringing cinnamon rolls to Christmas brunch at my in-laws.  I LOVE this wreath shape.  I will be using Pioneer Woman’s cinnamon rolls recipe.  If you haven’t tried it yet, you’re missing out!

These snowman are Nutter Butters dipped in white chocolate and decorated.  Thinking of making these for the kiddos for Christmas day dessert.  (Not too many of the kiddos are pie kids)

Brown Paper Packages Tied Up with String

Today is my Kiddos last day of school before Christmas break ~ wahoo!!!  I came across a cute gift bag idea this week that I knew would be perfect for their teachers and coaches.

 

You can find the directions and the printable here.

My printer needed a little feeding help ( a little pushing) to get it to feed the bag & I also changed my printers setting to cardstock to enable it to take the thick bag.

I filled the bags with a mini Pumpkin Spice Bread loaf and an assortment of chocolates.

This would make a great gift for co-workers, neighbors and even family.

Thanksgiving yummies

Happy Monday friends!

I’ve got Thanksgiving food on my brain this morning.  This year we’re going to my parents for Thanksgiving to hang with my parents, my 2 brothers and their wives and kiddos.

Here’s what we’re bringing to the Thanksgiving feast:

Corn Casserole

This has become a staple at our holiday meals since I first discovered it a few years ago.  If you love corn you will LOVE this!  It is super easy to make and most can be assembled the day before… bonus!

Pioneer Woman’s Scrumptious Apple Pie

I made this last year for Christmas & oh my!  I didn’t use any pecans on mine (have some non-pecan lovers).  It has oatmeal in the crumb topping and then after baking the pie you pour caramel sauce on top… oh yes!  It was divine!

Pioneer Woman’s Creamy Mashed Potatoes

This recipe will be a first-timer for me.  Every Pioneer Woman recipe I’ve made… I’ve LOVED… so I’m sure it will be a winner.  Folks it has cream cheese in it and a ton of butter… that’s right, there are no calorie counting on Thanksgiving – it’s time to enjoy your food!

Easy Sticky Buns

Hi Guys!  If you visit Pinterest you will understand my love of that site!  I’ve got a board full of recipes that I’m trying to work my way through.  My goal is to try one a week.

Last weekend I tried out All Things Delicious’ Sticky Bun Recipe.

When I saw the recipe I loved how easy this could be put together on weekend morning.  I tweaked the recipe a bit.

{Easy Sticky Buns}

2 tubes refrigerator buttermilk biscuits

5 Tbsp. butter or margarine, melted

1/2 C. syrup

2/3 C. packed brown sugar

1 tsp. cinnamon

Combine the melted butter and syrup and set aside for the moment.

In another bowl combine the brown sugar and cinnamon.

Now if you want to add pecans or walnuts you can add them to your sugar mixture.

Spray the bottom of a fluted pan with a non-stick spray.

Pour 1/2 of the butter/syrup combo into the bottom of the pan.

Sprinkle 1/2 of the brown sugar/cinnamon combo on top of the butter/syrup.

Now place the biscuits in an overlaying pattern filling in the fluted pan in a circular pattern.

Pour the remainder of the butter/syrup on top and then sprinkle the remainder of the sugar/cinnamon mixture on.

Bake in a 375 degree oven for about 30 minutes.

The results are delish! The family gobbled this up!

Pumpkin Spice Bar

I LOVE anything pumpkin this time of year.  This recipe makes plenty for sharing too.  If you love pumpkin like I do you might want to check out my Pumpkin Spice Bread recipe too.


{Pumpkin Spice Bars}

2  cups all-purpose flour

2  teaspoons baking powder

2  teaspoons ground cinnamon

1  teaspoon baking soda

1/4  teaspoon salt

4  eggs

1  15-ounce can pumpkin

1-2/3  cups granulated sugar

1  cup cooking oil

3/4  cup chopped pecans (optional)

  Pecan halves (optional)

1  11-oz. package cream cheese, softened

1/4  cup butter, softened

1  teaspoon vanilla

2  cups sifted powdered sugar

Directions

1. In a medium bowl stir together flour, baking powder, cinnamon, baking soda, and salt; set aside.

2. In a large mixing bowl beat together eggs, pumpkin, sugar, and oil with an electric mixer on medium speed. Add the flour mixture; beat until well combined. If desired, stir in chopped pecans. Spread batter into an ungreased 15x10x1-inch baking pan (the cookie sheets with an edge to them).

3. Bake in a 350 degree F oven for 25 to 30 minutes or until a wooden toothpick inserted in the center comes out clean. Cool completely in pan on a wire rack.

4. In a medium mixing bowl beat together the cream cheese, butter, and vanilla until fluffy. Gradually add powdered sugar, beating until smooth. Frost pumpkin bars. If desired, top with pecan halves.

Store, covered, in refrigerator up to 3 days. Makes 24 bars.

Countdown to Autumn Party… Pumpkin Poppers

We’ve reached September, so we’re getting closer!  I hope the area you’re in is starting to cool.  We’ve got another month of heat before we really start to cool down.

Well when I think of fall food, pumpkin is DEFINITELY at the top of my list.

These are made in a mini muffin pan, but you could definitely use a regular size muffin tin, just add to your cooking time.

{Pumpkin Poppers}

Popper:

1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoons cinnamon
1/2 teaspoons nutmeg
1/2 teaspoon allspice
1/8 teaspoons ground cloves
1/3 cup vegetable oil
1/2 cup brown sugar
1 egg
1 teaspoon vanilla extract
3/4 pumpkin (fresh or canned, just not pumpkin pie filling)
1/2 cup low-fat milk

For Coating
1 stick of unsalted butter, melted
2/3 cup granulated sugar
2 tablespoons cinnamon

Preheat your oven to 350 and spray your muffin pans.

Combine all the dry ingredients in one bowl and whisk till combined.

In another bowl, mix together the oil, brown sugar, egg, vanilla, pumpkin and milk.

Pour the dry ingredients into the wet and mix till it’s just combined (you don’t want to over mix).

Fill your mini tins till almost full.

Bake for 10-12 minutes.

While they’re baking, melt your butter and in a small bowl combine your sugar and cinnamon.

Let the poppers cool for a few minutes before rolling them around in the melted butter and then plunging them into their cinnamon sugar bath.

If you want less sugary sweetness you could just dip the top of the muffin into the butter & cinnamon sugar.

They look and taste like a pumpkin donut hole… delish!

Cherry Pie Bites

Happy Friday!

Are you ready for a 3 day weekend?  I’ve got a yummy, easy and even low-calorie treat to share with you.

I love cherry pie and when I came across these mini phyllo dough pie tarts I thought they’d be oh-so-yummy filled with cherry pie filling.

I found these cute tarts in the frozen food area near the pies.

I used a light cherry pie filling and just scooped a spoonful into each of the cute little tarts.

Pop them in the oven for whatever your package directs… mine was 8 minutes at 325.

These Cherry Pie Bites are only 30 calories a piece!!!  Makes them taste even better.
