Stuffed Crust Pizza

During the summer I try to get the kiddos more involved in the cooking.  Last week we had homemade pizza on the menu and my son suggested we try making stuffed crust pizza.  It turned out SO GOOD!!!

Here’s my favorite pizza dough recipe:

1 package active dry yeast

1 cup warm water

1/2 garlic salt

2 teaspoons olive oil

1 tbsp. honey

2 1/2 – 3 1/2 cups flour

(some times I’ll add basil, garlic and oregano)

I use a Kitchen Aid Mixer to make my dough.  Warm your mixer bowl by filling with warm water for a minute than dump out the water.  Add your cup of warm water and yeast to the warmed bowl.  Once yeast has been dissolved, add the salt, olive oil, honey and 2 1/2 cups of flour.

Mix with dough hook on Speed 2 for about 1 minute.  Add another 1/2 cup of flour and mix another 2 minutes.  Check the consistency.  If it’s clinging to the hook and is not too sticky then you don’t need more flour.  If there’s dough on the side of the bowl and it’s too sticky add another 1/2 cup of flour.

Knead on Speed 2 another 2 minutes.

Place dough in a greased bowl, turning to grease the top.  Cover and let rise about 1 hour.

Punch down.  Roll out on a floured surface to about 14 inches.

This is where we got to our stuffing!

We took 4 string cheeses and cut them into 4 pieces each.  Once the crust was rolled out we placed the cheese strips around the edge of the dough and rolled the dough over the cheese, making a nice thick crust.

I transferred the dough to a hot pizza stone (I put it in the oven while it’s preheating @ 450 degrees).  Then add your sauce, cheese and toppings.

Bake at 450 for about 10 minutes.

I’m pretty sure you can’t have too much cheese on (or in) pizza!

Creamy Pesto Chicken Pasta…

This week I’ve got a yummy, quick dinner recipe for you!

My girls and I love pasta, but even the guy-folks in my house enjoy this recipe.  It’s a very quick recipe & great with leftover chicken.

{Creamy Pesto Chicken Pasta}

1/2 lb. Pasta (your favorite shape)

salt

1 tbsp. butter

leftover or rotisserie chicken cut or shredded

1 can cream of chicken soup

1/2 c. of pesto sauce

1/2 c. milk

Once your water is boiling, add a little salt and your pasta & cook as your packaging directs.

Put your butter in a large skillet over medium heat and melt.  Toss in your chicken till it’s browned a bit.

Dump in your can of cream of chicken soup.  Mix till chicken is evenly coated.

Add your milk and pesto sauce. Stir till combined.

Once the sauce is gently bubbling, lower your heat to simmer while  your pasta finishes.

Strain your pasta when finished and dump into pesto mixture.

Stir well and leave on a low for another minute or two.

Serve your YUMMY pasta dish!

Teriyaki Turkey Burgers

With the beautiful weather that most of us are experiencing I had to share with you one of my favorite BBQ recipes.

Itemed Needed:

Ground Turkey

Asian salad dressing

Swiss cheese

pineapple rings

buns

and any other fixins you like

Put your ground turkey in a bowl and pour about 1/4 cup of the dressing on top.  Then get your hands all slimy mixing it together.  I let it sit about 1/2 hour.. if I’ve got time.  Then start grilling your turkey burgers.  In the last few minutes, put Swiss cheese on top of your burgers to melt and throw the pineapple rings and buns on the grill too.  Flip the rings after a minute of two.  I assembly my burgers at the grill. 

Bun… turkey burger with cheese… pineapple ring… bun…. yum!

Menu Board / Menu Planning…

A few years back I purchased this chalkboard from Ikea

I just discovered when I went to Ikea’s website, that this is magnetic too… who knew???

I painted the wood white and placed some paper along the back storage area, that complimented the paint in our dining nook.

I love having a weekly menu plan and I love having it posted on my cute board.  It helps me stay on track for pulling things out of the freezer and not struggling at 4pm to figure out “what’s for dinner?

During a week I will normally have at least 1 Crockpot meal, a Mexican dinner, a pasta dish, a bbq’ed entree, breakfast for dinner and a leftovers night.  I normally have one easy menu meal too… like hot dogs on Sunday. 

I also have the older kiddos dinner chores listed here.  They switch each week.  One does dishes and cleans and wipes down the counters… the other cleans and wipes down the kitchen table and sweeps the floors.  No confusion on who does what this way.
