Devil’s Food Cake Mix Cookies with Junior Mints are an easy cake mix chocolate cookie packed with a delicious mint! I love a homemade cookie. Store bought ones don’t tempt me… but homemade… yes. I love chocolate and mint so I thought I would try making one with one of my favorite mint candies… Junior Mints. This recipe took a little tweaking because of the gooey mint center in the candies… but the results are so soft, chewy and packed with chocolaty mint flavor. Another cake mix cookie I love is my Key Lime Cake Mix Cookies with Icing. The Cranberry Pistachio Shortbread Cookies are always a favorite during Christmas.

Easy to make chocolate cookies using a cake mix. It has a great mint flavor with the Junior Mints added.
- 1 Devil's Food Cake Mix
- 1/2 cup butter softened
- 2 eggs
- 2 tablespoons oil
- 1 teaspoon vanilla
- 1/2 cup flour
- 4 ounce box of Junior Mints cut in 1/2 (I froze them for about 5 minutes before cutting)
In a mixer add all the ingredients except the mints and mix until combined.
Add the Junior Mint pieces and mix those in by hand.
Bake at 350 for 10-12 minutes. Let them cool on the cookie sheet for 5 minutes before moving to a cooling rack to finish cooling.
