Ingredients

Chicken Salad Sandwich Mixture

  • 3 lbs boneless, skinless chicken breast cooked and shredded
  • ½-¾ cup Greek yogurt plain
  • 1 stock celery
  • salt and pepper to taste
  • 1-3 tsp Knorr Caldo de Pollo

Lemon Poppy Seed Dressing

  • ½ cup oil just shy of
  • cup Splenda or other granulated sugar substitute
  • cup white vinegar
  • cup lemon juice
  • 1 tsp poppy seeds

Instructions

Chicken Salad Sandwich Mixture

  • Cut your cooked chicken into bite-sized cubes. If you prefer your chicken salad shredded, you can shred the cooked chicken with two forks or put it into your standing mixer on low.
  • Then cut the celery stalk into small chunks.
  • Then combine all ingredients in a bowl. I start with the low amount for the Greek Yogurt and seasoning and add more until you get the texture and taste you desire.

Lemon Poppy Seed Dressing

  • I combine all the ingredients in a small mason jar and then just shake it up.

Notes

I like to chill the chicken salad sandwich mixture and the dressing for at least 30 minutes, preferably overnight before eating.
