Breakfast Quesadilla

Breakfast quesadillas are so easy to make and you can easily customize how you like them. Plus breakfast quesadillas are a portable on-the-go breakfast.

Ingredients

  • 4 eggs
  • 5 slices bacon
  • 4 sausage patties cooked frozen patties
  • cups Mexican blend cheese
  • 1 tbsp butter
  • 4 flour tortillas

Instructions

  • Cook your bacon pieces in a medium-heat skillet. Depending on the thickness of your bacon, 3-4 minutes per side. Place on a paper-towel-lined plate to cool when finished cooking.

  • Cook your frozen sausage patties as directed on the packaging. Set aside when finished to cool.

  • Slice the bacon and sausage into bite-sized pieces.
  • Crack your eggs into a bowl and whisk until smooth and a little lighter in color.

  • Use a little of the bacon grease in the skillet to cook your eggs. Heat skillet to medium-low and pour in the eggs. Scrap and stir the eggs until they are only a little moist. Remove them from the heat and salt and pepper to taste.

  • In a large skillet, add half a tablespoon of butter. Melt over medium heat, and swirl butter to cover the base of the pan. Add a flour tortilla. Add about a half a cup of the cheese to the top of the tortilla and spread to the edges.

  • Add half of the scrambled eggs on top of the cheese, spread out evenly.

  • Add half of the sausage pieces to the top of the eggs.

  • Add half of the bacon chunks on top.

  • Sprinkle about quarter cup of cheese on top and finish with another tortilla.

  • Cook for 2-3 minutes per side, depending how crisp you like your quesadilla to be. Carefully flip with a spatula and repeat cooking directions on the other side.
  • When finished place on a cutting board and let cool a minutes before slicing with a pizza cutter or knife.
  • Serve alone or with topping suggestions below.
