Lemon Poppy Seed Dressing
½cupoiljust shy of
⅓cupSplendaor other granulated sugar substitute

⅙cup lemon juice

Instructions
Chicken Salad Sandwich Mixture
Cut your cooked chicken into bite-sized cubes. If you prefer your chicken salad shredded, you can shred the cooked chicken with two forks or put it into your standing mixer on low.
Then cut the celery stalk into small chunks.
Then combine all ingredients in a bowl. I start with the low amount for the Greek Yogurt and seasoning and add more until you get the texture and taste you desire.
Lemon Poppy Seed Dressing
I combine all the ingredients in a small mason jar and then just shake it up.
Notes
I like to chill the chicken salad sandwich mixture and the dressing for at least 30 minutes, preferably overnight before eating.
