Red White and Blue Cakesicles

These red, white and blue cakesicles are sure to get you in the patriotic spirit this summer. They are the perfect treat for celebrating the 4th of July or any other patriotic holiday.

Ingredients

Red White and Blue Funfetti Cake

  • 1 box white cake mix
  • 3 eggs
  • water as directed on the cake mix box
  • 3 tablespoon instant vanilla pudding mix
  • 3 tablespoon sour cream
  • ½ cup red, white, and blue sprinkles

Cakesicles

  • 1 tub vanilla frosting
  • 4 cups white wafer melts
  • red and blue icing
  • red, white, and blue sprinkles
  • red, white, and blue stars

Instructions

Funfetti Cake

  • Preheat your oven to 350 degrees. Spray your 9x13 pan with nonstick spray.
  • In a large bowl, combine your cake mix, eggs, water, instant vanilla pudding mix, and sour cream. Mix together until combined.
  • Add the sprinkles and fold until the sprinkles are evenly dispersed through the batter.
  • Pour into the sprayed 9×13 pan and bake according to the the cake mix box, usually around 35 minutes.
  • Let the cake cool completely.

Cakesicles

  • Put half the cooled cake into a mixer bowl and attach the paddle attachment. Mix on low until the cake has crumbled.

  • Add ½ of the tub of frosting to the mixer bowl and mix on low until combined.
  • Melt your melting vanilla wafers in a microwave safe bowl according to directions. I usually start with 30 second intervals, stir and repeat until melted.
  • Let the melted chocolate sit for about 30 seconds before painting the melted chocolate into the mold. Make sure you coat the bottom and sides well.
  • You need to insert the popsicle stick into the slot on the bottom so that the opening won't be sealed with the melted chocolate. You can insert the stick and then remove the popsicle sticks.
  • Place the mold into the freezer for about 3-5 minutes to let that coat dry.
  • Remove from freezer and do a second coat of the melted chocolate, repeat the steps from above.
  • Remove from the freezer again and take a small ball size of the cake mixture and press it into the mold. You want the cake to almost go all the way to the top.
  • Now insert the popsicle back into the mold and press it all the way in.
  • Time for the melted chocolate on the top. You may need to reheat the chocolate to get it melted again. I like to use a offset spatula to spread a layer of chocolate on top.
  • Once you've coated the top of the molds, place back into the freezer for 30 minutes to let it set up.
  • After it's setup, you can remove the molds and press the cakesicles out. If needed you can use a pairing knife to clean up the sides.

Decorating Cakesicles

  • Get creative! I usually add some icing and then sprinkle or stars to the top. of the icing.

Notes

Place leftovers in an airtight container. The gel icing will not completely set, so you won't want to stack them.
