Spiced Apple Oatmeal Cookies

A delicious oatmeal cookie filled with apple chunks and all the warm spices of fall: cinnamon, cloves, and nutmeg.

Ingredients

  • cup all purpose flour
  • 1 cup whole grain oats
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ¼ teaspoon salt
  • ½ cup butter softened
  • ¾ cup brown sugar light or dark
  • 1 large egg
  • 1 teaspoon vanilla bean paste or vanilla extract
  • 1 small apple peeled and cut into small pieces

Instructions

  • Preheat oven to 350℉. Prep two cookie sheets with parchment paper.
  • In a bowl mix together the dry ingredients: flour, oats, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Make sure it's thoroughly combined.

  • In a mixer bowl, add the softened butter and brown sugar. Mix together for a couple minutes until smooth. Add the egg and vanilla, mix another minute.

  • Add the diced apples to the flour mixture and toss them around. Add the flour mixture to the mixer while it's on low. Mix until the flour has been combined with the wet ingredients.
  • Scoop a heaping tablespoon of cookie dough and place onto parchment lined cookie sheet. Repeat spacing your cookies about 2 inches apart.

  • Place into preheated oven and bake about 14 minutes. Remove cookies and let them cool on the cookie sheet for about 5 minutes before moving them to a cooling rack.

Notes

Store leftover cookies in an airtight container. They can be stored at room temperature or in the refrigerator. These cookies are delicious warm and cold!
