Ingredients
1½cupall purpose flour
1cupwhole grain oats
½teaspoonbaking powder
½teaspoon baking soda
1teaspoonground cinnamon
½teaspoonground nutmeg
½teaspoonground cloves
¼teaspoonsalt
½cupbuttersoftened
¾cupbrown sugarlight or dark
1large egg
1teaspoonvanilla bean paste or vanilla extract
1smallapple peeled and cut into small pieces
Instructions
Preheat oven to 350℉. Prep two cookie sheets with parchment paper.
In a bowl mix together the dry ingredients: flour, oats, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Make sure it's thoroughly combined.
In a mixer bowl, add the softened butter and brown sugar. Mix together for a couple minutes until smooth. Add the egg and vanilla, mix another minute.
Add the diced apples to the flour mixture and toss them around. Add the flour mixture to the mixer while it's on low. Mix until the flour has been combined with the wet ingredients.
Scoop a heaping tablespoon of cookie dough and place onto parchment lined cookie sheet. Repeat spacing your cookies about 2 inches apart.
Place into preheated oven and bake about 14 minutes. Remove cookies and let them cool on the cookie sheet for about 5 minutes before moving them to a cooling rack.
Notes
Store leftover cookies in an airtight container. They can be stored at room temperature or in the refrigerator. These cookies are delicious warm and cold!
