Ingredients

  • 1 cup stuffing leftovers already cooked, prepared
  • 1 cup mashed potatoes
  • ½ cup turkey small bite-sized pieces
  • 1 large egg
  • ½ cup flour
  • 2 tbsp butter softened or melted for the waffle maker

Instructions

  • In a medium bowl, combine the leftover mashed potatoes and stuffing.

  • Add the leftover turkey that has been cut into bite-sized pieces.

  • Stir those ingredients together until evenly dispersed.

  • Add a large egg.

  • Add flour. Mix until smooth and combined.

  • Heat up waffle iron. When ready to use, brush the waffle iron grates with butter.

  • Scoop half of the mixture onto the hot waffle iron. Close lid. Mine took about 5-6 minutes to cook. You want it golden brown and crisp on the edges.

  • Once waffle has cooked, use a fork to remove and place on a plate or platter to serve. If you want, you can sprinkle with some salt and pepper if needed.

  • Repeat directions for your other waffle.

Notes

I used a 7" waffle maker. If you use a smaller size you will need to use less batter, otherwise your batter will spill out of your waffle maker.
If using a mini waffle maker, you probably can make 8 waffles with this batter.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
They can be reheated in the microwave or oven.
