boxspice cake mix
3.4ouncebox of instant vanilla pudding mix
1cupapple cider
½cupmelted butteryou can use canola or vegetable oil instead
3largeeggs
½large Granny Smith applepeeled and cut into bite-sized pieces
2tbspall purpose flour
Instructions
Preheat your oven to 350° F. Spray muffin pans with nonstick cooking spray.
In a bowl, add your spice cake mix, instant pudding mix, and apple cider. Stir until smooth.
Add the melted butter and stir. Then add the eggs, stir until smooth.
Toss your peel and cut apple pieces with the flour to coat them.
Add the apple chunks to the muffin batter. Fold the apples into the batter to evenly distribute them.
Spoon the batter into the prepared muffin cups, filling them ¾ full.
Bake for 45-50 minutes until a toothpick inserted into the center comes out with only a few crumbles. Let them cool in the pan for 5-10 minutes before removing to finish cooling on a cooling rack.
