Instructions
Preheat oven to 400℉. Place a sheet of parchment paper on a baking sheet.
In a large bowl, combine the flour, sugar, baking powder, and chai spice.
Grate the frozen butter into the flour mixture. Mix together to coat the butter with flour. (if your kitchen is warm, place flour/butter bowl in fridge until you need it again).
In a small bowl, whisk together the ½ cup of heavy cream, egg, and vanilla bean paste.
Make a well in the center of the flour mixture, pour the cream mixture in the center and gently mix the wet and dry ingredients together. (it will still be a little dry and crumbly looking)
Pour the mixture out on a work surface and press and pat the scone dough into an 8 inch circle. Then cut the circle into 8 pieces.
Move the pieces to the parchment lined baking sheet. Brush the tops of each scone with heavy cream.
If desired, sprinkle some chai spice on top of each scone.
Bake in preheated oven for 18-23 minutes, until the top is a light golden brown.
Let the scone cool on the baking sheet for at least 15 minutes before serving of icing.
Icing
Mix together powdered sugar and milk to form a simple icing to drizzle on top of scones if desired.
