Chai Scones

A delicious and flaky scone with those warm spices that come with a chai.

Equipment

  • 1 baking sheet
  • 1 grater

Ingredients

  • 2 cups all purpose flour
  • cup granulated sugar
  • 2 tsp baking powder
  • 2 tsp chai spice
  • ½ cup salted butter frozen (if you don't have salted butter, use regular butter, but add ¼ tsp salt).
  • ½ cup heavy cream
  • 1 large egg
  • 1 tsp vanilla bean paste or vanilla extract
  • 2 tbsp heavy cream for brushing on top of scones

Icing

  • ½ cup powdered sugar
  • 1 tsp milk

Instructions

  • Preheat oven to 400℉. Place a sheet of parchment paper on a baking sheet.
  • In a large bowl, combine the flour, sugar, baking powder, and chai spice.

  • Grate the frozen butter into the flour mixture. Mix together to coat the butter with flour. (if your kitchen is warm, place flour/butter bowl in fridge until you need it again).

  • In a small bowl, whisk together the ½ cup of heavy cream, egg, and vanilla bean paste.

  • Make a well in the center of the flour mixture, pour the cream mixture in the center and gently mix the wet and dry ingredients together. (it will still be a little dry and crumbly looking)
  • Pour the mixture out on a work surface and press and pat the scone dough into an 8 inch circle. Then cut the circle into 8 pieces.
  • Move the pieces to the parchment lined baking sheet. Brush the tops of each scone with heavy cream.
  • If desired, sprinkle some chai spice on top of each scone.
  • Bake in preheated oven for 18-23 minutes, until the top is a light golden brown.
  • Let the scone cool on the baking sheet for at least 15 minutes before serving of icing.

Icing

  • Mix together powdered sugar and milk to form a simple icing to drizzle on top of scones if desired.
