Lemon Sugar Cookie
4cupsflour
1teaspoonbaking soda
1teaspooncream of tartar
1teaspoonsalt
1cupconfectioner sugar
1/2cupbutter
1cupoil
2eggs
1 1/2teaspoonsvanilla
2tablespoonslemon juice
1teaspoonlemon zestif desired
Lemon Icing
4tablespoonsconfectioners sugar
1tablespoonlemon juice
1teaspoonwater
Instructions
Cookie Directions
Spray a 9"x13" pan with cooking spray. Preheat your oven to 350 degrees.
In a bowl whisk together your flour, baking soda, cream of tartar and salt.
In a separate bowl beat the sugar, butter and oil together.
Add the eggs and mix in one at a time.
Add the vanilla and the lemon juice. Mix to combine.
Add the flour mixture and mix on a low speed until combined.
Bake for 28-30 minutes, until top is lightly browned and the center is set.
Lemon Icing Directions
Combine the ingredients in a small bowl and whisk until smooth.
Once the cookie bar has cooled, drizzle the lemon icing on top and then serve.
Drop cookies
You can make drop cookies with this recipe. Just make sure to refrigerator the dough for at least 30 minutes. Drop by the teaspoon onto a slightly greased cookie sheet and bake for 10-12 minutes.
Notes
Bar Cookies can be keep in an airtight container at room temperature for 3 days or in the refrigerator for a week.
