Ingredients
1can sweetened condensed milk
⅓cuplime juice
2large eggs
¼cupbuttermelted
½cupall purpose flour
¼teaspoonbaking powder
⅙teaspoonsalt
1lime zest
1teaspoonvanilla extract or vanilla bean paste
powdered sugarfor dusting
Instructions
Preheat oven for 350℉. Grease a muffin tin with butter or nonstick spray.
In a bowl, whisk together the condensed milk, lime juice, eggs, melted butter, flour, baking powder, salt, lime zest, and vanilla extract. Whisk until smooth.
Pour the mixture into greased muffin tin, filling ¾ full.
Bake in preheated oven for 20-22 minutes until tops are golden.
Let cool in pan for 10 minutes, then move to cooling rack.
Once cooled completely, dust with powdered sugar.
