Ingredients

  • 1 can sweetened condensed milk
  • cup lime juice
  • 2 large eggs
  • ¼ cup butter melted
  • ½ cup all purpose flour
  • ¼ teaspoon baking powder
  • teaspoon salt
  • 1 lime zest
  • 1 teaspoon vanilla extract or vanilla bean paste
  • powdered sugar for dusting

Instructions

  • Preheat oven for 350℉. Grease a muffin tin with butter or nonstick spray.
  • In a bowl, whisk together the condensed milk, lime juice, eggs, melted butter, flour, baking powder, salt, lime zest, and vanilla extract. Whisk until smooth.

  • Pour the mixture into greased muffin tin, filling ¾ full.
  • Bake in preheated oven for 20-22 minutes until tops are golden.
  • Let cool in pan for 10 minutes, then move to cooling rack.
  • Once cooled completely, dust with powdered sugar.
