Blueberry Mug Muffin |Perfect for Back to School

Some of my kiddos start school next week. I’m not sure how summer went by so quick. We all honestly need another month, but we’re gearing up to go back none the less. During the summer meals are lazy and without much thought. We eat at weird times and eat weird things, but once school starts and they are back in a routine their hunger seems to follow a routine too. Breakfast always seems to be the toughest meal… maybe because I’m still half-asleep or because I have a kiddo who just isn’t hungry at 8 am, but needs food. So I’ve got an easy back to school breakfast idea for you guys… a Blueberry Mug Muffin. Plus it uses this great new drink we discovered in the recipe.
I’ve been trying to switch our family over to more organic foods and I love the New O Organics line. We were traveling this summer and popped in a Vons to grab some snacks when one of my kiddos noticed the O Organics Kombucha drinks in their refrigerator section. We grabbed a bottle of each of the flavors. They come in Ginger Lemon, Mango Mint, Guava, Pomegranate Hibiscus Lime, Cranberry Peach and Raspberry Black Currant. My son downed the Mango Mint before the ac had a chance to cool the car down. He loves Mango in anything, but he loved it paired with the Mint. My youngest daughter grabbed the Pomegranate Hibiscus Lime. She loved the tang the lime added.
While the kiddos each enjoyed one on the ride home, my brain went to work thinking about how to incorporate this delicious drink into a mug muffin recipe. So here it is… and it’s delicious!
Recipe:
- 1/4 cup flour
- 1 tbsp brown sugar
- 1/4 tsp baking powder
- 1/8 tsp salt
- pinch of cinnamon
- pinch of cloves (if you like)
- 2-3 tbsp Cranberry Peach O Organics Kombucha
- handful of frozen blueberries (or other favorite fruit)
Add the dry ingredients to the base of your mug (flour, sugar, baking powder, salt, cinnamon and cloves (if desired).
Mix together then add the butter. My butter was softened so it combined easily with a folk. If your butter is cold using your fingers might be easier.
Once the butter has been combined and it looks like pie crust it’s time to add the O Organics Kombucha. Start with 2 tbsp and add more if it’s too dry. It should look like thick pancake batter. Sprinkle your handful of blueberries on top.
Pop it in your microwave for approximately 90 seconds.
