Potato Cheese Soup ~ My Favorite Soup
It’s Friday, so I’m sharing another favorite of mine. I ADORE potato cheese soup. I think I first fell in love during a Claim Jumper visit. If you’ve never been to Claim Jumper, I’m truly sorry… but if you get a chance you should go – it’s so yum!
For years now I’ve tried different recipes in my quest to find one close to my beloved CJ’s.
A few weeks ago I tried this recipe and OMGosh!
It’s hearty, lots of cheese and potatoes, bacon & sour cream… what more do you need?
Ingredients:
2/3 cup butter
2/3 cup flour
7 cups milk
4 large baking potatoes, baked, cooled, peeled and cubed, about 4 cups
4 green onions, thinly sliced
10 to 12 strips bacon, cooked, drained, and crumbled
1 1/4 cups shredded mild cheddar cheese
1 cup (8 ounces) sour cream
3/4 teaspoon salt
1/2 teaspoon pepper
In a large pot melt your butter. Stir in flour; continuing to stir until smooth and bubbling. Slowly add milk while stirring constantly until sauce has thickened (this part takes a while, but it will thicken). Add your potatoes and onions to the pot. Continue to cook, stirring constantly, until soup begins to bubble. Then you can reduce the heat and let it simmer gently for 10 minutes. Add your remaining ingredients and stir until all the cheese has melted.
Serve while piping hot. Served with some homemade bread, it makes for a perfect fall meal!
Oh… it serves 6-8 and it’s just as yummy reheated.
Enjoy & have a wonderful weekend!

I have been looking for this recipe for so long. I can’t wait to try it this weekend for a soup party that I’m going to. It’s going to be a hit.
I am stuffed! Yummy. I just finished eating another yummy bowlof this stuff left over from last night’s meal. It may be better than Claim Jumper’s potato soup, it’s that fantastic. Thanks for sharing.
Glad you love it! I think I’ll be making the 1st batch of the fall this week… it’s gotten cold in So. Cal.
Wowza! Yep, I'm flagging this recipe. Looks SO good.
I have been to Claim Jumpers twice..I believe it was in California and again perhaps in COlorado? Can't remember much about it other than an amazingly large, delicious piece of chocolate cake for dessert.
Looks scrumptious…I think the hubby will like this one…thanks for sharing. Have a fun and safe weekend.
Blessings,
Linda
