Happy Weekend Friends!  The unofficial end of summer ~ Labor Day weekend, although for all of us who have kiddos already back in school, I’m sure you agree with me… summer already ended … boo!

Chicken & Chips

Today I’ve got an easy dinner recipe for you guys made from one of my new favorite snacks.  A couple months ago I noticed Green Giants Sweet Potato Sea Salt chips while grocery shopping and picked up a bag… and fell in love.  I call it my photo editing snack.

So when the opportunity to work with Green Giant™ and their new chips came, I jumped on it… I already loved the one I had tried.  They sent me 2 bags of their newest flavors (which we hadn’t tried):  Roasted Veggie Tortilla Chip in Garden Ranch and Multigrain Sweet Potato Chip in Barbecue.

My kiddos LOVED them.  My girls are HUGE fans of ranch chips and they said these tasted just like their usual ones… and I love these because they are packed with whole grains and veggies – YES!  I love anything bbq and the Sweet Potato Barbeque chips were my favorite.

So for dinner this week I thought I make us some Chicken and Chips.  This is a really easy dinner recipe.  I made both a Barbeque and Garden Ranch option.

Start by putting a couple handfuls of chips into a baggie and crumble up the chips.

Coat boneless, skinless chicken breast with either mayonnaise or plain yogurt.

Sprinkle on some pepper then roll your chicken in your crushed chips.

Put the coated chicken in a baking dish that you’ve coated with cooking spray.

Bake at 400 for 25 minutes.

The results were delicious!

Even my picky eater loved it and it’s a quick dinner to make.
