Grilled Chicken Melon-Berry Summer Salad
Happy July DS readers! I’m so happy to be back this month to show off this amazing summer salad! Last month I had you drooling over a really quick and simple meal, Summer Grilled Chicken and Asparagus, and it was delicious! So if you missed it, you need to check that out! Trust me, you wont regret it! Now that we are in the heat of summer, I wanted to share with you something light and yummy.
When imagining summer, often times I find myself daydreaming about the fruits that are at their peak this time of year! Melons, strawberries, and sun… Oh my! So I thought, why not throw all of these amazing textures and flavor together to create a summer salad that is bursting with summer goodness?
As a mom of two young children I know it can be hard to get them to eat certain things that they need. Meat is always a struggle with my kids. They will eat greens and fruit for days, but would be happy if I told them they don’t need to touch the proteins. (nice try little rabbits!) One of the great things about this salad is that the kids can get excited about it because it involves bright-colored fruit! They are so interested in the fruits that they didn’t even notice that they also ate the greens and chicken. Score one for Mom! Let’s check out just how simple this win can be!
GRILLED Chicken Melon-Berry Summer Salad
Ingredients:
1 Boneless Chicken Breast- Cooked, Cooled and Sliced
3 Cups of Fresh Mixed Greens
1/2 Cup of Cantaloupe- Sliced
1/2 Cup of Watermelon- Sliced
1/2 Cup of Strawberries- Sliced
1/4 Cup of Red Onion- Sliced
1/4 Cup of Feta Cheese
2 Tablespoons of Raspberry Vinaigrette (More or less if preferred)
Instructions:
- Layer ingredient as such: greens, onions, melons, strawberries, and cheese.
- Fluff salad slightly to mix ingredients.
- Lightly drizzle dressing onto salad.
- Enjoy!

Being that I am in the last weeks of being pregnant with baby #3, and its summertime, I am not really that interested in hot home cooked meals. So this meal is perfect! It is jammed packed with balanced goodies that are good for the bump, and also tastes fantastic. This salad would be a great fit for a summer evening, or even if you make a larger batch, for a family dinner/ gathering! It’s a fresh and light salad to tingle the taste buds!
