Chocolate Chip Pancakes for One
Do your kids love chocolate chip pancakes? They usually are a birthday pancake for us. I love this recipe because you can easily change these pancakes up to add whatever you like. Like my Blueberry Pancakes that are a favorite on school mornings.
You can use your favorite pancake recipe to make these. I rarely have buttermilk on hand, so I always use the trick of measuring out my milk just shy of what the recipe calls for. Then add a couple tablespoons of white vinegar to the milk. I let the milk and vinegar sit while I put together the rest of the ingredients. When you come back to the milk/vinegar mixture you’ll find that it has thickened up within a couple minutes.
Once you have your pancake batter finished, I take a ladle and pour 1 almost full ladle into the bottom of a mason jar. Add a few of your favorite chocolate chips, then add another ladle of pancake batter on top. A few more chocolate chips and some more pancake batter. You want to repeat this process until you are just under 1/2 full in your mason jar.
Now this is the great part! You can cook it up right now in the microwave or you can put your mason jar lid on a keep in the refrigerator until you’re wanting to enjoy your hot, melted chocolate chop pancakes.
I’ve kept them in my refrigerator for 4-5 days. Once you’re ready to eat your pancakes, remove your mason jar lid and place in your microwave. It takes 2 minutes for my pancakes to cook. I’d suggest keeping on eye on your pancakes… they will REALLY puff up… above the top of the mason jar! Don’t worry though… totally normal! You’ll looking for the pancake to be dried out. Look through the mason jar at the base to check at maybe 1 min 45 seconds… every microwave is different.
