Old Fashioned Zucchini Bread
Happy Wednesday, everyone! It’s Hannah from Through the Lens and I’m here with one of my family’s favorite recipes. This was my great-grandma’s “famous” zucchini bread recipe, and not only is it super quick and easy to make, it is oh-SO yummy!
Old Fashioned Zucchini Bread
Ingredients:
3 eggs, beaten
1 cup oil (I also sometimes use 1/2 cup oil and 1/2 applesauce)
2 cups sugar
2 cups grated zucchini
2 teaspoons vanilla
1 teaspoon soda
1 teaspoon salt
1/2 teaspoon baking powder
3 cups flour
2 teaspoons cinnamon
Directions:
Preheat oven to 350. Beat eggs, add oil, sugar, zucchini and vanilla. Sift dry ingredients and add to zucchini mixture. Mix until blended. Pour into 2 greased loaf pans. Bake for 50-60 minutes.
We have so many fond memories having this bread….and it’s perfect for a snack or breakfast.

I notice so many people just list “flour”…is it all-purpose? …. is it self-rising? …. is it cake flour?….
All purpose flour.
