The Ultimate Peanut Butter Cookie Bars
This is one of my favorite dessert recipes, Peanut Butter Cookie Bars! Are you a peanut butter lover? I adore peanut butter! Peanut butter milkshakes, peanut butter with apples, peanut butter smoothies… even just peanut butter on a spoon. So it’s not shocking that one of my favorite cookies to make involves peanut butter. And I love bar cookies! I like that they are thicker, which usually mean softer and chewier… oh and they are so much quicker to make! So today I’m sharing with you my Ultimate Peanut Butter Cookie Bar.

Brace yourselves for a double dose of peanut buttery goodness that will elevate your snack game to a whole new level. These bars are not just a treat; they’re a peanut butter lover’s dream come true!
Making Peanut Butter Bar Cookies
Preheat and Prepare:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan and set it aside.
Cream and Mix:
In a mixer bowl, cream together the softened butter, granulated sugar, brown sugar, and peanut butter until light and fluffy. Add the eggs one at a time, beating well after each addition. Add vanilla extract until the mixture is smooth.
Combine the Dry Ingredients:
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, ensuring everything is well combined.
Add the Good Stuff:
Fold in the peanut butter chips, distributing them evenly throughout the batter. The more, the merrier!
Spread the Joy:
Spread the cookie dough batter in an even layer into the prepared baking dish. Sprinkle some extra peanut butter chips on top because we believe in going all out.
Bake to Perfection:
Bake in the preheated oven for 35-40 minutes or until the edges are golden brown and a toothpick inserted into the center comes out with a few moist crumbs (but not wet batter).
Cool and Cut:
Allow the bars to cool completely in the pan before cutting them into squares. This step requires patience, but trust me, it’s worth it.

The Ultimate Peanut Butter Cookie Bars
Equipment
- mixer
- 9×13 pan
Ingredients
- 1/2 cup butter
- 1/3 cup creamy peanut butter
- 1 cup sugar
- 1 cup brown sugar
- 3 eggs
- 1 teaspoon vanilla
- 2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups flour
- 1 bag of peanut butter chips
Instructions
- Cream the butter, peanut butter and sugars until creamy and well mixed, approximately 5 minutes.
- Add the eggs and vanilla extract and blend till combined.
- Add the baking powder and salt and mix till combined. Then add flour and mix till just combined.
- Add the bag of peanut butter chips and mix on slow till evenly dispersed.
- Put your cookie batter into a 9×13 buttered dish and bake at 350 for 35-40 minutes.
