Carrots and Corn with Honey Herb Sauce and Thanksgiving Kit Giveaway

Happy Friday Friends! We are less than 2 weeks away from Thanksgiving… can you believe it? I love Thanksgiving and I love all the yummy foods of that day… I can’t wait!
Today I’ve got a great side dish for your Thanksgiving menu. If your kiddos are like mine they love carrots and corn, so this dish is yummy and beautiful too and a great way to incorporate some veggies in your Thanksgiving menu.
- 1 bag of baby carrots
- 1 bag of frozen white corn
- 2 tbsp of Country Crock’s Honey Spread
- 1 garlic clove minced
- 1 tsp of fresh basil
- garlic salt, to taste
- pepper, to taste
- 1 tbsp olive oil
- Preheat the oven to 400 degrees. Drizzle about a tablespoon of olive oil onto a cookie sheet. Place the baby carrots on the cookie sheet and roll them around to coat lightly. Season the carrots with garlic salt and pepper to taste. Bake for 20 minutes, tossing in the pan once during cooking. In a saucepan bring water to a boil and then place the frozen corn into the pan. Once the corn returns to a boil, cover and cook for 3-4 minutes. Once the corn and carrots are cooked, place 2 tablespoons of Country Crock Honey Spread in a skillet. Melt over medium, low heat adding the garlic and basil. Once melted, add the cooked carrots and corn to the skillet and stir. Once coated your dish is ready to serve.

Country Crock – Cinnamon Roasted sweet potatoes sound delicious and I may try that this year. I love to make Sage and Sausage stuffing to with my turkey dinner!

I’m a total Thanksgiving glutton so I dont have 1 favorite but several 🙂 I love my 10lb ultra heart stopping baked mac n cheese & sweet potato pie if I had to narrow it down.
