I’m a Southern California native.  If you’ve ever visited SoCal  you know we have some great Mexican food here!  If you love chicken enchiladas then you’re going to love this Chicken Enchilada Dip!

This dip is full of gooey, cheesy goodness!

Let me share the recipe for this dip.

  • 2 boneless, skinless chicken breasts – cooked, shredded and cut into bite sized pieces
  • 8 ounces of cream cheese, softened
  • 10 ounces of diced tomatoes with green chiles
  • 15 ounces of your favorite enchilada sauce
  • 1 tablespoon taco seasoning
  • 1 cup and 1/2 cup of Mexican blend of cheese (Cheddar or Monterey Jack is great too)
  • Mission® Thin & Crisp Tortilla Chips

Preheat your oven to 375 degrees.  Place your bite sized pieces of chicken into a medium sized bowl.  Add the softened cream cheese, diced tomatoes with green chilies, and enchilada sauce to the bowl.   Mix together until combined.  Add 1 cup of the Mexican blend of cheese to the bowl and mix until combined.  Pour into an oven safe dish and add the remaining 1/2 cup of Mexican cheese to the top.  Bake for 20-25 minutes until hot and bubbly.  Serve hot with Mission® Thin & Crisp Tortilla Chips.
