Cinnamon Roll Coffee Cake
Today I’ve got a delicious, gooey, oh-so-yummy breakfast treat… Cinnamon Roll Coffee Cake and it’s easy! I love making something a little more special for breakfast on the weekend. This is the perfect recipe as it wows – yet it’s an easy prep (you can even do it the night below).
This coffee cake recipe is great for the holidays. You can make it Christmas Eve for Christmas morning, it’s great for Easter or Mother’s Day too.
Ingredients you need:
- canned cinnamon rolls
- vanilla pudding mix
- cinnamon
- brown sugar
- butter
Can you make this in a Bundt pan?
YES!!! I prefer to make this in a Bundt pan. It will cook up quicker, plus it makes for a beautiful presentation when you serve it up in a beautiful ring.
How to make this easy Cinnamon Roll Coffee Cake
This treat definitely isn’t low in fat or calories, but it’s wonderful for one of those days where calories don’t count… you know, like your birthday, Christmas, Mother’s Day, etc.
You start by cutting up the refrigerated cinnamon rolls into four pieces. Toss them into the bottom of your greased Bundt pan (I use cooking spray).
Sprinkle the vanilla pudding mix on top of the cinnamon roll chunks.
Then sprinkle the brown sugar and cinnamon mixture on top of everything.
Pour the melted butter all over and then bake it up.
After it’s bake up and cooled for a bit, turn it out onto your serving plate and then use the icing glaze that came with the cinnamon rolls and finish off the top with that delicious cream cheese icing.

Cinnamon Roll Coffee Cake
Ingredients
- 2 cans of cinnamon rolls I used Pillsbury Cinnabon rolls in your grocery’s fridge
- 1 small box of vanilla pudding the kind you cook
- 1 teaspoon cinnamon
- 2/3 cup brown sugar
- 1/2 cup melted butter
Instructions
- Pop open your cans of cinnamon rolls and cut each roll into 4 pieces. Place the cinnamon roll chunks into a grease pan evenly.
- Sprinkle the vanilla pudding mix over the cinnamon roll chunks. Then sprinkle the cinnamon and brown sugar on top of that.
- Finish by drizzling the melted butter on top.
- Bake at 350 degrees for 25-30 minutes.
- Once you’ve removed it from the oven let it cool about 10 minutes before turning it onto your serving platter.
- Immediately drizzle the cream cheese icing (that came with your cinnamon rolls) onto the warm coffee cake.
OMGosh! This was divine!! Better than divine! I put it together the night before and popped it in the oven on Christmas morning! This was so easy , pretty, and full of flavor. Kids adored it and adults alike. It eats like a monkey bread. It was crispy on the outside and ooey gooey on the inside. What a visual treat, too! SOOOOOOOOOOO good! Huge thank you for sharing!
