Pumpkin Cake with Cinnamon Icing
Hey y’all! This is Hannah from Through the Lens! I am super excited to share my newest favorite recipe.
With tomorrow being Thanksgiving I wanted to make something with pumpkin, but I’m not a fan of the traditional pumpkin pie. What to do? My awesome husband suggested a pumpkin cake. Why not? I decided a cinnamon icing would be perfect. I made this cake for my husband and then for a meal at church- all but one piece was eaten! Everyone loved it.
This recipe is super easy and oh-so yummy!
Pumpkin Cake with Cinnamon Icing
Ingredients:
2 eggs
2 cups of sugar
1/2 cup oil
2 1/4 cup flour
1 tsp. baking soda
1/2 tsp. salt
1- 15oz can of pumpkin
1 tsp. vanilla
Walnuts for the top of the cake (if desired)
Directions:
Preheat oven to 350. Combine eggs, sugar, oil, pumpkin and vanilla. Add dry ingredients. Pour into greased pan and bake for 40-50 minutes. While it’s baking combine 1 cup of powdered sugar, 1 tsp. vanilla, 1 tsp. cinnamon and 1/4 cup of milk. You might need to add more milk/ sugar depending on how thick you want to have your icing. Mine was more like a glaze. Once the cake has cooled, pour the icing over the cake, sprinkle the nuts on top, and you are ready to eat!

I’d love to try this recipe, but I’m not sure what size pan you’re using. From the picture, it looks like an 8″ or 9″ round cake pan. Can you help clarify? Thanks!
