Last year I came across this recipe at Secrets of a Southern Kitchen. I made it last year for Thanksgiving and it’s become a family favorite… it is SO YUM!
I can’t wait to eat it tomorrow!
{Corn Casserole}
1 package Jiffy corn muffin mix
1 can of cream style corn
1 can of whole kernel corn, slightly drained
8 oz. of sour cream
1 egg
1 stick of butter
Put the stick of butter in a 9×13 casserole dish and place in the oven to melt as the oven preheats at 350 degrees. Mix the other ingredients together and pour into the pan of melted butter. Bake at 350 for 30 minutes or until the center is set up and the edges are browning.

MMMMmmmm…. that corn casserole sounds divine and appears easy to make… just not sure if I can get corn muffin mix or a suitable subsitute here in Australia? Fingers crossed though because I now have serious corn cass cravings!

I have almost the same recipe, given to me by my sis in law. We leave out the egg and I don't use Jiffy – but this is so delish, especially for the holidays! Happy Thanksgiving!

you can also make this in a crock-pot if you need the oven for other things! 4 hours on high. I tried it recently in the crock-pot for the first time & it worked great
hmm i didnt even think of that, i just got a new crock pot that ive been wanting to use! lol
