Thanksgiving Leftovers Hand Pies are the perfect way to serve up all those fabulous leftovers from Thanksgiving day. These hand pies are customizable to whatever leftovers you want to add. For these hand pies, I put in turkey, mashed potatoes and stuffing.  They would be awesome with sweet potatoes, Corn Casserole with Bacon and cranberry sauce. Whatever you’ve got, whatever is your favorite you can add to make these delicious, portable meal.

As the Thanksgiving feast settles and the leftovers start piling up, it’s time to get creative in the kitchen. Forget the plain old reheating routine; we’re about to embark on a culinary adventure to transform those turkey, mashed potatoes, and stuffing remnants into delightful hand pies that will have your taste buds doing the happy dance.

The beauty of hand pies lies in their versatility. Raid your refrigerator for the remaining treasures from your Thanksgiving feast:

  1. Turkey: Shred it into bite-sized pieces for that savory protein punch.
  2. Mashed Potatoes: Creamy goodness that will add a comforting touch to your hand pies.
  3. Stuffing: The unsung hero of Thanksgiving, ready to impart its herby, carb-filled charm.

Building the Perfect Hand Pie:

  1. Roll Out the Dough: Flour your parchment paper, roll out the dough, and cut it into 6 pieces. Think of it as creating little pockets of happiness.
  2. Layering Goodness: Place a couple pieces of turkey, followed by a spoonful of mashed potatoes, and a dollop of stuffing in the center of three of the pieces of crescent dough. Don’t be shy – pile it on!
  3. Seal the Deal: Place the tops on each hand pie. Seal the edges with a fork, ensuring that no flavor escapes.

If you want the tops of your hand pie a little crispier, you can brush the tops with an egg wash before baking.

Other Leftover Hand Pie Options

  • dip your hand pies in warmed gravy or some cranberry sauce
  • use pie dough instead of crescent roll dough
  • add some fresh flavor – thyme, parsley, garlic, and celery can be added to your pies before baking to add some new and different flavors to your leftovers

Equipment

  • parchment paper

Ingredients

  • 1 can crescent roll
  • 3-6 pieces leftover turkey
  • 6 tbsp mashed potatoes
  • 6 tbsp stuffing dressing leftovers

Instructions

  • Preheat oven to 375 ℉.
  • Lightly flour a sheet of parchment paper. Open the can of crescent rolls and unroll them on your floured parchment paper. Use your fingers or a rolling pin to smooth and remove the seams, so you have one large piece of crescent dough.
  • Cut your dough into 6 even sized pieces, so you'll have 3 tops and 3 bottoms for your hand pies.
  • Place 1 or 2 slices of leftover turkey on 3 of the dough pieces. You want to leave space around the edges so you can seal the hand pie later.

  • Add 2 tbsp of mashed potatoes on top of the turkey. Add 2 tbsp of stuffing (dressing) on top of the mashed potatoes.

  • Add the top dough and with a fork crimp the edges to seal around the hand pie.

  • Bake in a 375-degree oven for 10-12 minutes, until the tops are golden brown.
  • Let the pies sit 5 minutes and then serve warm.

Notes

Store leftovers in the an airtight container in the refrigerator for up to 3 days.
