These smores brownies are delicious chewy brownies made from a boxed brownie mix. It’s a fun smores recipe that starts with a simple boxed mix.

How To Make The Brownie Cookies

Combine the brownie mix, melted butter and eggs until smooth.

Then you want to refrigerate the brownie batter for at least 1 hour to allow it to firm up.

Then scoop the batter onto a parchment lined baking sheet and bake in the oven for half the time needed.

–Sprinkle With Graham Crumble and Marshmallow Fluff

That’s the key I found to make these smores brownie cookies. At six minutes I pull them from the oven to add the layers of graham cracker chunks and marshmallow fluff.

Then place the cookies back into the oven to bake for six more minutes.

  • 1 brownie mix 18.2 ounce size box
  • ½ cup butter melted
  • 2 eggs
  • 3 graham crackers
  • 1 cup marshmallow fluff


  • Pour brownie mix into a large bowl.
  • Add the eggs and melted butter.

  • Mix together until smooth.

  • Place the brownie batter in the refrigerator for at least 1 hour to chill.
  • Preheat the oven to 350℉.
  • Scoop tablespoon sized batter onto a parchment lined baking sheet.

  • Bake for 6 minutes then remove to add toppings.

  • Add graham cracker chunks for a small scoop of marshmallow fluff to the center of the half baked cookies.
  • Place back into the oven for 6 more minutes to finish baking.

  • Remove and let them sit on the baking sheet for 5 minutes before moving to a cooling rack.


These cookies can be eaten at room temperature or placed in an airtight container to eat later. They can be kept at room temperature stored for up to 3 days or in the refrigerator for up to a week. 
I think these cookies are best chilled.
