Smores Cake Mix Bar Cookies
I’m on a roll making treats from cake mixes, this month I’ve got a Smores Cake Mix Bar Cookies recipe, and it’s so good! It’s chewy and packed with all those s’more flavors you love… chocolate, graham crackers, and marshmallows. I love making traditional smores, but these are great for the kid’s lunches or for a summer potluck.
The bar cookie starts with a white cake mix as the base and it has large chocolate chips, chunks of graham crackers, and of course mini marshmallows.
Smores Cake Mix Bar Cookies
This bar cookie is so simple to make. It takes just minutes to put together. Stay with pouring your cake mix into a bowl.
You’ll mix and then add your eggs.
Mix until the batter is smooth and well combined. Then it’s time to add all the yummy parts that make this a smores bar cookie.
Add the chocolate chips, mini marshmallows, and graham cracker chunks.
Fold together until everything is evenly dispersed. Then press into your nonstick sprayed pan.
After the bar cookie has baked for 20-25 minutes you’ll let it cool before cutting. Then it’s time to enjoy this delicious treat!
Once these Smores Cake Mix Bar Cookies were cooled, cut and photographed they were gobbled up. Definitely a family favorite.

Smores Cake Mix Bar Cookies
Ingredients
- 1 white cake mix
- 1/2 cup melted butter
- 2 eggs
- 1 cup chocolate chips
- 1 cup mini marshmallows
- 1 cup graham crackers broken into big chunks, I used 3 whole graham crackers
Instructions
- Preheat oven to 350° Fahrenheit. Spray a 9x13 pan with nonstick spray.
- Pour the white cake mix into a bowl. Add the melted butter to the cake mix. Mix until combined.
- Add the eggs to the bowl. Mix until combined.
- Add the chocolate chips (these are my favorite), mini marshmallows, and graham crackers to the bowl. Fold together until the chocolate chips, marshmallows, and graham crackers are evenly dispersed.
- Dump into the nonstick sprayed 9x13 pan and use your fingers to press into the base of the pan until it's evenly spread out.
- Bake at 350° for 20-25 minutes until the edges are lightly browned.
- Let cool at least 30 minutes prior to cutting.
