Easy Pumpkin Spice Poke Cake

Thanks for Sharing!

If you’re looking for an easy pumpkin dessert that tastes like fall in every bite, this Pumpkin Spice Poke Cake needs to be on your baking list.
It’s soft, moist, full of warm pumpkin spice flavor, and topped with a creamy layer that makes every bite extra delicious.
And because it’s a poke cake, there’s a little bit of magic hiding underneath the topping.
After the cake is baked, holes are poked throughout the top so the delicious filling can soak down into the cake. That means you get all that wonderful flavor throughout the entire dessert instead of just on top.
It’s the kind of pumpkin dessert that looks impressive when you bring it to the table but is surprisingly easy to make.

And let’s be honest—when I’m making dessert for a gathering, “easy” is always a very good thing.

This recipe takes a box mix and turns it into a wonderful fall treat.  It’s moist, not a heavy dessert, yet it’s full of all those fall flavors we love.

What Is a Poke Cake?

If you’ve never made a poke cake before, the concept is wonderfully simple.

You bake the cake, then use the handle of a wooden spoon or another utensil to poke holes throughout the top.

A sweet filling is then poured over the cake so it can seep down into those holes.

The result is an incredibly moist cake with extra flavor running through every bite.

It’s one of my favorite ways to take a basic cake and turn it into something that feels much more special.

Ingredients You’ll Need

The ingredients for this pumpkin spice poke cake are simple, making it an especially easy dessert for fall baking.

You’ll find the complete ingredient list and measurements in the recipe card below.

The pumpkin and warm spices give the cake its classic fall flavor, while the poke-cake filling adds moisture and sweetness.

For the best pumpkin flavor, make sure you’re using pure pumpkin puree rather than pumpkin pie filling if your recipe calls for pumpkin puree.

How to Make Pumpkin Spice Poke Cake

Step 1: Bake the Pumpkin Cake

Start by preparing the cake according to the recipe below and spread the batter into your prepared baking pan.

Bake until the cake is cooked through and a toothpick inserted in the center comes out clean.

The kitchen should already smell pretty amazing at this point.

Step 2: Poke the Cake

Once the cake has baked, it’s time for the most important part of a poke cake.

Use the handle of a wooden spoon to poke holes throughout the top of the cake.

Try to distribute the holes fairly evenly so the filling has plenty of places to soak into the cake.

Don’t be afraid to poke down into the cake.

Those little tunnels are where all the deliciousness is going!

Step 3: Add the Filling

Pour the filling over the top of the cake, giving it time to seep down into the holes.

I recommend pouring slowly and spreading the filling evenly over the entire cake.

This helps distribute the flavor throughout the cake rather than allowing the filling to collect in just a few spots.

Step 4: Add the Topping

Once the cake has cooled as directed in the recipe, spread the creamy topping evenly over the entire surface.

This gives the cake that beautiful finished look and adds a delicious creamy contrast to the pumpkin spice cake underneath.

Step 5: Chill

Place the cake in the refrigerator and allow it to chill before serving.

This is one of those desserts that actually benefits from a little time in the refrigerator.

The filling has time to settle into the cake, the flavors come together, and the slices are easier to cut.

How to Get the Best Poke Cake

Don’t skimp on the holes

The holes are what make a poke cake a poke cake!

Space them fairly evenly across the surface so the filling can distribute throughout the dessert.

Pour the filling slowly

Rather than dumping everything in one spot, pour the filling over the cake gradually.

This gives it a chance to find all those little holes.

Let the cake chill

If you have time, make this cake several hours before serving.

Even better, prepare it the day before.

It’s a fantastic make-ahead dessert for holidays and gatherings.

Can I Make Pumpkin Poke Cake Ahead of Time?

Absolutely!

In fact, this is one of the reasons I love poke cakes for entertaining.

You can prepare the cake ahead of time and refrigerate it until you’re ready to serve.

That makes it especially convenient for Thanksgiving, fall parties, potlucks, and family gatherings when there are already a million other things happening in the kitchen.

The combination of a soft pumpkin-spiced cake and a creamy topping makes this feel especially well suited to early fall baking. For anyone planning ahead, the useful detail is that it aims for an easy dessert while still delivering those warm seasonal flavors in each slice. I’d be interested in whether chilling it for a few hours makes the creamy layer settle even more cleanly before serving. This is the kind of recipe that could make a simple autumn gathering feel more festive without adding much complexity to the baking list.
