Andes Mint Chocolate Cookie Cups
Andes Mint Chocolate Cookie Cups are the perfect bite-sized dessert when you need some chocolate and mint in your life. This is an easy baking recipe that is great for showers, parties, or anytime.

How to Make Mint Chocolate Cookie Cups
I’m a huge fan of the combo of mint and chocolate! Combine that with the fact that these cookie cups are bite-sized and you know you’ve got the excuse to eat a couple of them.
Chocolate Cups
- flour
- cocoa powder
- egg
- vanilla
- butter
- baking soda
- salt sugar
Stir together the flour, cocoa powder, baking soda, and salt. In a separate bowl, I used a handheld mixer to cream together the butter and sugar. Once you have an even consistency, add the egg and vanilla. Make sure to scrape down the sides of the bowl to get everything mixed together well.

Add the dry ingredients to the bowl and mix until smooth.

Add about 1 teaspoon of the batter into the cavities of the mini muffin pan that you’ve sprayed well. Works perfectly in a 24-count mini muffin pan.

Bake them up and as soon as you remove them from the oven you want to press in the center of each to form the cup shape. You can use the back of a small measuring teaspoon, shot glass, etc… anything that is the size, shape you need to form into a cup. The backside of a cookie scoop or the end of a large wooden spoon works too.

After cooling for a few more minutes you’ll let them cool completely on a wire rack.
Mint Frosting
- butter
- powdered sugar
- mint extract
- heavy crean
- green food coloring
- Andes Mint piece (or half of an andes mint or other chocolate mint candies)
In a large mixing bowl cream together the butter, powdered sugar, and heavy cream until smooth. Add the mint extract and green dye to cream that great color and flavor.
Use a piping bag to fill the centers of the chocolate cookie cups. If you don’t have a piping bag you can improvise using a baggie and cutting off one of the corners to create your own DIY piping bag.

Ingredients
Cookie Cups
- 1 ½ cups all purpose flour
- 1/3 cup cocoa powder
- 1 large egg
- 1 tsp vanilla extract
- ½ cup salted butter softened to room temperature
- ½ tsp baking soda
- ¼ tsp salt
- 1 cup granulated sugar
Frosting
- ½ cup salted butter softened to room temperature
- 1 and 1/3 cup powdered sugar
- 1/8 tsp mint extract
- 2 tbsps heavy cream
- 2 drops green food dye
- ½ cup andes mints pieces
Instructions
Cookie Cups
- Preheat oven to 350 degrees.
- Lightly coat a mini muffin tin with vegetable shortening.
- In a large bowl, whisk together the flour, cocoa powder, salt and baking soda.
- In another large bowl, beat the sugar and butter together for 1-2 minutes.
- Add the egg and vanilla extract and beat until combined.
- Slowly add the dry ingredients into the wet ingredients and beat until combined.
- Add about 1 tsp of cookie dough to each mini muffin cavity. (¾ full)
- Bake cookie cups for 10-12 minutes.
- Cookie cups will be soft when they come out of the oven. Use the back of a measuring spoon, shot glass or other small circle to gently press in the center of each cookie cup.
- Allow the cookies to rest for 5 minutes before removing them to a wire cooling rack.
- Allow the cookies to cool completely before adding the icing.
Frosting
- Beat the butter with the heavy cream and powdered sugar until well combined.
- Add the mint extract and food coloring and beat until well combined.
- Pipe the frosting on top of each cookie cup.
- Sprinkle andes mints pieces on top of each cookie cup.
- Enjoy!
