Junior Mint Cake Mix Cookies
Junior Mint Cake Mix Cookies are easy to make. A delicious chocolate cake mix and iconic Junior Mint candies make a great cookie! I love a homemade cookie. Store bought ones don’t tempt me… but homemade… yes. I love chocolate and mint so I thought I would try making one with one of my favorite mint candies… Junior Mints. This recipe took a little tweaking because of the gooey mint center in the candies… but the results are so soft, chewy and packed with chocolaty mint flavor. Another cake mix cookie I love is my Key Lime Cake Mix Cookies with Icing. The Cranberry Pistachio Shortbread Cookies are always a favorite during Christmas.
Ingredients
- chocolate cake mix (I used a Devil’s Food cake mix)
- butter
- large eggs
- oil
- vanilla extract
- flour
- Junior Mint candies
Making Junior Mint Cake Mix Cookies
These Junior Mint Cookies are perfect if you’re a chocolate mint lover! We took this batch of cookies over to a friends house the other night and they were gobbled up. I love how quick and easy they are to make.
Add the cake mix, softened butter, eggs, oil, vanilla, and flour to a large bowl or a mixer bowl. I used a standing mixer, but you could mix by hand.
Mix until combined, then add the Junior Mints to the mixing bowl. Combine those by hand though, so the candy pieces stay intact.
Scoop the cookie dough onto a baking sheet with parchment paper. Then bake up in your oven.
Devil’s Food Cake Mix Cookies with Junior Mints
Ingredients
- 1 Devil’s Food Cake Mix
- 1/2 cup butter softened
- 2 large eggs
- 2 tablespoons oil
- 1 teaspoon vanilla
- 1/2 cup all purpose flour
- 4 ounce box of Junior Mints cut in 1/2 (I froze them for about 5 minutes before cutting)
Instructions
- In a mixer add all the ingredients except the mints and mix until combined.
- Add the Junior Mint pieces and mix those in by hand.
- Scoop the chocolate cookie dough and form cookie dough balls. Place cookies 2 inches apart. I made my cookies about 1" in size. If you want larger or smaller adjust the bake time.
- Bake at 350 for 10-12 minutes. Let them cool on the cookie sheet for 5 minutes before moving to a cooling rack to finish cooling.
- Enjoy!

using andes candies broken up of their chips sounds like a wonderful idea…i should of thought of that.

wow! what a mess! don’t do it! they tasted great but the jr mints oozed out everywhere! I used a level small cookie scoop; the sugar from the mints leaked out all over the place!
SUGGESTION: bake the cookies; place mints on top of cookies while still hot OR place upon hot baked baked brownies! great tasting, great idea but not good idea to put in the cookie batter! i have owned/operated my home-based bakery for over ten years. you can trust my judgement. k
I love cake cookies, they are so yummy! I made some with my granddaughter, but we used Andes mint chips. They didn’t last long.
Oh… that would be delicious with Andes mints!!
