Sausage Biscuit Breakfast Sandwiches
These Sausage Biscuit Breakfast Sandwiches are a twist on a holiday favorite from my husband’s side of the family. A delicious homemade biscuit with bite-sized pieces of sausage in the biscuit, turned into a breakfast sandwich with eggs and bacon.
Sausage Biscuit Breakfast Sandwiches
I love family gatherings around breakfast. Whether it’s Christmas morning breakfast or a brunch get-together during the busy holiday season, breakfast food brings people together. My mother-in-law makes a sausage biscuit for Christmas morning, so I put my own spin on that holiday classic when I created these sandwiches. They are great for a gathering but also great on the go!
Ingredients and Directions for Biscuit Sandwiches:
Sausage Biscuit Ingredients
- Pork Sausage Links
- flour
- baking powder
- teaspoon salt
- butter
- milk
Bacon
- Farmer John Classic Premium Bacon, cooked and cut in half
Eggs
- eggs
- milk
- salt and pepper to taste
Other Options
- cheese – you can add a slice of sharp cheddar cheese or pepperjack if you want some heat
- sausage patties – if you want more protein you could add a layer of a patty in your sandwich
- ham – you could put a slice of breakfast ham in your sandwich

Sausage Biscuit Breakfast Sandwiches are great for the holidays. Biscuits with chunks of sausage baked in with eggs and bacon make the perfect breakfast.

- 5"x7" pan or something similar size
Ingredients
Sausage Biscuits
- 4 sausage links cooked and cut into bite-sized pieces
- 2 cup flour
- 1 tbsp baking powder
- ¼ tsp salt
- ½ cup buttter cold and cut into cubes
- 1 cup milk
Bacon
- 6 slices bacon
Egg
- 6 large eggs
- ½ cup milk
- salt and pepper to taste
Instructions
Sausage Biscuits
- Preheat oven to 425 ℉.
- Place flour, baking powder and salt into a food processor. Pulse 5-7 times.
- Add the cold, cubed butter to the flour mixture and pulse 5-7 times or until your butter is in pea-sized pieces.
- Add your milk and pulse until it comes together.
- Add the bite-sized pieces of the Farmer John Classic Pork Sausage Links and fold together until evenly dispersed.
- Drop the batter onto a parchment lined cookie sheet forming 6 large biscuits.
- Bake in your preheated oven for 18-22 minutes until golden brown.
Bacon
- I like to cook my bacon in the oven on a n a baking rack, set on top of a cookie sheet. Or you can cook on your stovetop if you prefer. You can place the bacon in with the biscuits. At 425 ℉ they will take 20-30 minutes depending on the thickness of the bacon and how crisp you prefer your bacon to be.
Eggs
- Whisk together your eggs, milk, salt, and pepper in a medium sized bowl.
- Pour the egg mixture into a well greased pan. I used a pan that 5"x7". The egg mixture came up about an inch. You will be cutting this into 6 pieces, so you can put into whatever size pan you want, but I'd recommend something around this size.
- Bake in a 375℉ oven for about 25 minutes until the edges are bubbly and there’s a little browning.
Sandwich Assembly
- Let your biscuits cool at least 15 minutes before cutting. Then slice your biscuit in half.
- Add a square of your baked egg to the bottom of the biscuit.
- Cut a slice of bacon in half and place it on top of the egg square.
- Put the top of the biscuit on top. Enjoy your sandwich!
Notes
If you don’t have a food processor you can make the biscuits in a bowl and use a fork or a pastry cutter to incorporate your butter. Leftovers can be stored in an airtight container or wrapped in plastic wrap. Keep in the refrigerator for up to 4 days.
