The Easiest Lemon Parfait Recipe
The Easiest Lemon Parfait Recipe is so delicious and quick to make. Layers of sugar cookie, lemon pudding, and whipped topping. This dessert takes just minutes to make and it’s perfect for spring and summer.

Ingredients:
- sugar cookies (shortbread cookies would be great too)
- lemon pudding (you could use lemon curd if you wanted something richer)
- whipped topping (you could also use whipped cream if you prefer)
That’s it! I used homemade sugar cookies for mine, but you could purchase store-bought cookies or even the refrigerated tube cookies and bake them up before assembling this yummy parfait.

How To Make Lemon Parfait
A parfait is just layers of goodness that creates this delicious dessert. I started my parfait by placing crumbled cookies into the bottom of a small glass. You could use mason jars, but the preference when making a parfait is using something clear so you can see those layers. I crumbled the cookies into bite-sized pieces. You could use pound cake or angel food cake cut into small pieces if you prefer.

The next layer of this parfait is lemon pudding. Now I went super simple and just bought a 4-pack of lemon pudding cups. So I scooped a couple heaping teaspoons full of the pudding on top of the cookies. Like I suggested above, you could use a lemon curd, or a can of lemon pie filling. Pick which flavor and richness you prefer.

The final layer I used whipped topping. I added a couple heaping spoon of the whip. You could whisk up some heavy cream with a little sugar and create your own whipped cream. I would whip until you get soft peaks for this recipe.

Then repeat until you reach the top of your glass or jar. My glasses are small, so I only had two layers of each ingredients. I finished mine off with a little cookie crumble, but some lemon zest would be beautiful too.

This treat has great lemon flavor, just is not too heavy, perfect for the warm and even hot weather.

Lemon Sugar Cookie Parfaits
Ingredients
- 6 sugar cookies
- 4 lemon pudding cups
- 1 cup whipped topping
Instructions
- First step is crumbling your cookies. I used 1 cookie per layer, but my cookies were on the smaller side. Depending on the size of your cookie and the size of your container, this might change.
- Place cookie crumble on the bottom of your glasses or jars. You want to make sure the base is well covered and I went up about 1/2 inch with the cookie.
- Then add some lemon pudding. I used ½ of a pudding cup on this layer. Spoon it on and spread it over the cookies.
- Then add some whipped topping. I used 2 heaping teaspoons for this layer.
- Then repeat. I used about the same amount of cookies for the next layer.
- For the second lemon pudding layer I used about ¾ of a pudding cup (since the glass was a little wider toward the top).
- Then the final layer of whipped topping I used about 3 heaping teaspoons. I finished with some cookie crumble on top.
- Place in the refrigerator and let them chill for at least 30 minutes before serving.
