Imagine a creamy lemon filling atop a buttery graham cracker crust, all perfectly chilled and ready to melt in your mouth. Now, picture making this indulgence without even turning on your oven. Yes, you read that right – these lemon bars are entirely no-bake, with the lemony goodness whipped up effortlessly in the microwave.

Ingredients

  • graham crackers
  • butter
  • sugar
  • eggs
  • lemon juice
  • lemon zest

Prepare the Crust

  • In a food processor, combine the graham cracker crumbs and melted butter until well mixed.
  • Press the mixture evenly into the bottom of a 9×9-inch square baking dish lined with parchment paper. Use the back of a spoon or a flat-bottomed glass to firmly pack the crust.
  • Place the crust in the refrigerator while you prepare the lemon filling.

Make the Lemon Filling

  • In a microwave-safe bowl, whisk together the sugar and eggs. Add the lemon juice, lemon zest, and butter mixing until smooth and well combined.
  • Microwave the mixture in 1-minute intervals, stirring between each interval, until it thickens slightly. This should take about 5 minutes in total. Be sure not to overcook it – we want a silky smooth consistency.
  • Once the filling is ready, pour it over the chilled graham cracker crust, spreading it out evenly.

Freeze and Serve

  • Cover the baking dish with plastic wrap and place it in the freezer for at least 3 hours, or until the bars are firm.
  • Once frozen, remove the bars from the freezer and let them sit at room temperature for a few minutes to soften slightly.
  • Use a sharp knife to cut the bars into squares or rectangles, depending on your preference.
  • Serve these chilled delights straight from the freezer, garnished with a sprinkle of powdered sugar or a dollop of whipped cream if desired.

Ingredients

Crust

  • 12 whole graham crackers
  • 4 tablespoons melted butter

Lemon Filling

  • 1 1/4 cups sugar
  • 4 eggs
  • 1 cup lemon juice
  • lemon zest from 2-3 lemons
  • 1/2 cup butter melted

Instructions

  • Break graham crackers into smaller pieces and pulse in the food processor till they are fine crumbs.
  • Drizzle in melted butter and pulse in the graham cracker crumbs just till it comes together.
  • Press into a 9×9 pan and put in the refrigerator for at least 30 minutes to set up.
  • In a microwave safe bowl mix together the sugar and eggs to combined. Add in the lemon juice, zest and melted butter.
  • Microwave on high in 1 minute increments. Stir after each minute.
  • It should take about 5 minutes /5 one minute increments to thicken up. You want the curd to coat the back of your spoon.
  • Spoon the lemon curd on top of the graham cracker crust and place in the freezer 3+ hours till firm.

Notes

Store leftovers in the freezer until ready to heat.
Keep them cover. Can be kept in the freezer for up to 2 weeks.
