What is Chai?
If you aren’t familiar with chai, I highly recommend you try it if you love fall flavors. When I open a can of chai tea mix it smells like cinnamon and vanilla to me, but there are many more spice profiles in chai. Every chai recipe is slightly different, but here are some spices that you might see in your chai mix: black tea, ginger, cardamom, ground cinnamon, fennel, black pepper, cloves, star anise, coriander seeds, and peppercorns. Lots of intense flavors in chai spices!

Notes
Tips for Making the Best Chai Sugar Cookies
Use Softened Butter
Make sure your butter is softened to room temperature before mixing the dough.
Softened butter blends more easily with the cookie mix and egg.
Don’t Overbake the Cookies
Keep a close eye on these cookies during the last few minutes of baking.
You want them soft and tender rather than dry.
Start checking them around the 9-minute mark.
Let the Cookies Cool Before Icing
It’s tempting to drizzle the chai icing as soon as the cookies come out of the oven, but give them time to cool first.
If the cookies are too warm, the icing will melt and run right off.
Want More Chai Flavor?
If you’re a serious chai lover, you can adjust the amount of chai flavor to suit your taste.
The chai drink mix is doing double duty here—it’s flavoring the cookie dough and the icing.
What Kind of Chai Drink Mix Should I Use?
This recipe uses spiced chai drink mix, rather than individual chai spices.
Different brands of chai drink mix can vary in flavor and sweetness, so the finished cookies may taste slightly different depending on the mix you use.
I recommend using a chai drink mix that you already enjoy drinking.
If you love the flavor in your mug, chances are you’ll love it in these cookies, too!
Can I Make These Cookies Without the Icing?
Absolutely.
The cookies have plenty of chai flavor on their own, so you can leave off the icing if you want an even simpler cookie.
That said, I really love the extra chai flavor and pretty drizzle that the icing adds.
Can I Make These Ahead of Time?
Yes!
These cookies are a great option for holiday baking because you can make them ahead of time.
Once completely cooled, store them in an airtight container.
They’re perfect for cookie exchanges, holiday parties, family gatherings, or simply keeping a batch on hand when you want something sweet.
