Easter Mini Eggs Brownie Bites
These Easter Mini Eggs Brownie Bites are a quick and easy treat to make with your kids. These delightfully chocolatey bites are the perfect Easter treat. Super simple to make using your favorite brownie mix and my personal favorite Easter candy, Cadbury Mini Eggs.

This recipe gives you that fudginess that I love with a surprise inside. This dessert is great fudgy brownies but in a bite-size, so you can pop and go.

- favorite brownie mix
- ingredients for brownie mix (typically oil, water, and eggs)
- Cadbury Mini Eggs
- mini muffin pan
- flour nonstick spray

Easter Mini Eggs Brownie Bites
I personally love brownies made with a box mix over homemade. Anyone else? I like a chewy brownie and I find that a box mix just delivers that easier. Homemade brownie recipes will work though too. I also love making brownies in my mini muffin pans because you get more of that chewy outer edge, which I love.
Start by preparing the brownie batter as the instructions on the box detail. Typically that calls for oil, water, and eggs. Dump all the ingredients into a bowl.

Stir the batter together until mostly smooth.
Preheat the oven as directed on the brownie box.
Then you need to prep your mini muffin pans. Spray the mini muffin pans generally with the flour nonstick spray. Then I use a tablespoon to scoop the mixture into each of the muffin pan cavities. Fill them 3/4 of the way full.

Before I bake them I place one Cadbury Mini Egg into the center of each of the mini muffins filled with brownie mix.

The chocolate Easter eggs will sink into the batter.
You will bake them and if you like as soon as you remove them from the oven you can place another egg on top, gently pressing it into the brownie. They will need to cool a few minutes before you remove them from the pan to finish cooling on a rack.

These Easter Brownie Bites have a great fudgy texture and have that delicious surprise chocolate egg in the center.
Easter Mini Eggs Brownie Bites

Ingredients
- 1 Brownie Mix follow the directions as directed on box
- oil
- water
- eggs
- Cadbury Mini Eggs
- Flour nonstick spray
Instructions
- Preheat your oven to 350°F. Prep your mini muffin pan by generously spraying with floured nonstick spray.
- Prepare the brownies as directed on the box. Mix all the ingredients together until smooth.
- Use a tablespoon to scoop the brownie batter into each of the mini muffin pan spaces. Fill each space to about 3/4 full.
- Then add a Cadbury Mini Egg to each cup.
- Bake in preheated oven for 22 minutes.
- Remove from oven, and if you want, place another egg on top of brownie bites, pressing gently.
- Let the brownie bites cool 10 minutes in the pan before removing.
- I like to use a pairing knife to loosen the bites, but they should come over very easily with the nonstick spray.
- Place on an a cooling rack for another 10 minutes before enjoying.

Many of times I will just use a cake mix and use milk in place of the water
